The problem

Training trips shouldn't be planned the night before you fly.

You've booked Mallorca. Some days are for riding, some days are not. You know the training you want — tempo, endurance, VO2, recovery — and you know the climbing your legs can take.

What you don't have is the time, or the local knowledge, to stitch each session onto the right roads. So you fall back on the same out-and-back you found on Strava, or you ride whatever the group goes on, and the training intent disappears.
